UW-Madison food service has made an effort to cater to its vegan and vegetarian residents. Starting approximately four years ago it labeled food items as vegan or vegetarian in order to inform this minority of their options due to requests from students.
Popular vegan items include the Boca burger, vegan chili and pasta with non-meat sauce, according to Associate Director of University Housing Robert Fessenden and UW-Madison Food Service Administrator Carolyn Yanke.
Because the demand for vegan options is so scarce, the food service attempts to develop vegan recipes that “have an appeal” to a larger group, Fessenden said.
