I am extremely disappointed with both Katrina Peterson's Sept. 15 article, \A week as a vegan,"" and her even weaker attempt at veganism. Adopting a vegan diet can be a substantial change and may require significant effort, If a lifelong vegetarian decided to start eating meat, and began by eating nothing but hot dogs and bologna sandwiches for a week, would we be surprised if this person grows tired of a non-vegetarian diet? Of course not!
In the past week, I have consumed no peanut butter sandwiches and no salads, and I am not wasting away nor am I hungry. But rather, I have enjoyed tofu scrambles and pancakes, pasta primavera, snow peas and fried rice and vegetable lasagna, among many other delicious, nutritious foods.
If she is at all concerned with animals being boiled and dismembered and the disgusting amount of pollution from factory farming, then she will try out veganism again.
