Have s'mores all year round

Summer is officially over, meaning no more bonfires and no more of the famous campfire treat, s’mores. I am the biggest s’mores fan in the world, so I can’t wait until next summer to have my favorite tasty dessert. Luckily, I’ve found some simple s’mores recipes to help get me through fall, winter and spring.

S’mores Trail Mix

This is a simple snack with all the great flavors of a s’more and is quick to make. I mix Golden Grahams Cereal, honey flavored Teddy Grahams, chocolate chips, Hershey’s Drops and mini marshmallows in a big bowl. You can add whatever you want in any quantities. Just make sure you get a bit of everything in your handfuls!

S’mores Dip

I’ve made this dip before and it does taste exact like a s’more. It’s a simple recipe to bring s’mores to you throughout the year, without a campfire or the mess!

Ingredients:

1 14oz can sweetened Condensed Milk?

1 1/2 cups Chocolate Chips

1/2 cup marshmallow cream?

Graham Crackers for serving

In a microwavable bowl, melt the chocolate chips and sweetened condensed milk on high for about 1-2 minutes or until the chocolate chips are completely melted. Stir it every 30 seconds. Spread onto whichever dish you wish to serve the dip in. Drop the marshmallow cream randomly over the chocolate mixture and microwave on high for about 30 seconds or until it is softened. Swirl in the marshmallow throughout the chocolate mixture, creating a marbled appearance. Serve with graham crackers for dipping!

S’mores Cookie Bars

This recipe has become my signature baked good. It is more challenging and time consuming to make than the last two, but once you try it, you won’t regret it.

Ingredients:

2/3 cup butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

3/4 teaspoon salt

1 teaspoon cinnamon 2 1/4 cups flour

11 oz. dark chocolate chunks

1 1/4 cup mini marshmallows, divided

3 regular (or 2 large) sized Hershey bars, broken into pieces

2 sleeves (boxes usually come with 3) graham crackers, broken into squares

First, preheat your oven to 375 degrees. In a medium bowl, whisk together flour, baking soda, salt and cinnamon (I never add the cinnamon because I find it makes the final product taste too much like cinnamon). In a large bowl, cream together butter and sugars with an electric mixer until fluffy, about 2-3 minutes. Add in vanilla and eggs mixing well after each addition. Gradually add in the flour mixture. Once the flour mixture has been added, stir in chocolate chunks and marshmallows with a wooden spoon. Take the graham crackers and break them in half, it will make the bars easier to cut in the end. Lay out these graham crackers on a cookie sheet leaving no gaps if possible. Spread the dough around on top of the graham crackers, it doesn’t have to be perfect, it will spread during baking. Bake until the cookie dough is almost done, around 10-12 minutes, and take out. Pour the rest of the mini marshmallows on top of the dough and press Hershey’s chocolate squares all over. Bake again for 5-7 minutes. Let the bars cool before cutting. Then serve and enjoy.
